  • 3          ripe DOLE® Bananas
  • 1          container (8 ounces) fat-free whipped topping, thawed
  • 7          low-fat honey graham crackers, coarsely crushed
  • 1          pound Dole Strawberries, hulled and quartered

Line 12-cup muffin tin with cupcake liners. In large bowl, mash bananas; fold in whipped topping.

Fill muffin cups halfway with graham cracker pieces, banana mixture and strawberries; repeat layers with remaining ingredients.

Refrigerate cupcakes 4 hours; serve in cupcake liners.

Mini-Marbled Cherry Cheesecake Cupcakes

  • 18        chocolate cookies with white filling
  • 2          packages (8 ounces each) cream cheese, softened
  • 1/3       cup sugar
  • 2          eggs
  • 1          teaspoon vanilla
  • 1          can (21 ounces) Lucky Leaf Premium Cherry Fruit Filling, divided

Heat oven to 350 degrees Fahrenheit. Line muffin tins with 18 paper liners.

Place one chocolate cookie in bottom of each paper liner.

In mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fold in half of fruit filling. Fill each muffin liner about 3/4 full with mixture.

Take 20-25 minutes, or until done. Cool. Top each cheesecake with spoonful of remaining fruit filling.


Cherry Coffee Cake

  •           nonstick cooking spray
  • 1          can (12.4 ounces) refrigerated cinnamon rolls with icing
  • 1 1/2    cups (21-ounce can) cherry pie filling
  • 1/2       cup slivered almonds or pecans (optional)

Heat oven to 375 F.

Spray 9-inch round cake pan with nonstick cooking spray.

Separate cinnamon roll dough into eight rolls; cut each roll into quarters.

Place dough rounded-side down in pan.

Spoon pie filling over rolls. Sprinkle almond slivers or pecans over cherry filling, if desired.

Bake 25-35 minutes, or until golden brown.

Invert onto plate or cutting board. Invert again onto serving plate.

Remove lid from icing. Microwave 3-10 seconds. Stir icing and drizzle over warm coffee cake.

Serve warm.
